Just to close this out, after bleeding the brakes and topping everything off, the brakes are fantastic. Can't wait to see what happens next...there are some odd vibrations from the rear end, I may look at the U-Joints next! The best way to field test your braking system & booster: DO NOT start ...

This would suggest that the servo (booster) was not functioning in the first place.
